Gıda Kaybı ve İsrafını Önlemede İşletmelerin Süreç Yönetimi ve Tüketicilerin Davranışsal Katılımı

Özet

Üretim aşamasından nihai tüketiciye ulaşana kadar gıda kaybı ve israfı çeşitli sosyal, ekonomik ve çevresel etkilere neden olduğu gezegenimiz için sürdürülebilirlik sorunudur. Sürdürülebilir Kalkınma Hedeflerinin (SDG) sağlanması için ve tarım sektöründe tarımsal verimlilik üzerinde olumsuz etkilerini ortadan kaldırmak için gıda kaybı ve israfını en aza indirmek için çaba göstermek kritik öneme sahiptir.  Birleşmiş Milletler Gıda ve Tarım Örgütü (FAO) ve diğer uluslararası organizasyonlar bu çabaları desteklemektedir. Gıda kaybını en az seviyeye indirmek için gıda işletmelerinin süreçlerini gözden geçirmesi ve iyileştirmesi süreç yönetiminin işleyişi açısından önemlidir. Ayrıca küresel gıda israfı sorunuyla mücadele etmek için tüketicilerin davranışlarını etkilemek ve tüketicilerin sürece katılımını sağlamak açısından kritik bir öneme sahiptir. Bu çalışmanın amacı, gıda kaybı ve israfını önlemede işletmelerin süreç yönetimi ve tüketici davranışı hakkında bir anlayış oluşturmaktır. Çalışmada, Web of Science, Scopus ve Google Scholar gibi önemli veri tabanları aday gösterilerek sistematik analiz yöntemi önerilmiştir. Çalışmanın kavramsal çerçevesinde çalışma amacına uygun olarak gıda israfı, gıda kaybı, sürdürülebilirlik, tüketici, işletme ve süreç yönetimi kavramlarını içerir. Makaleler, gıda kaybı ve israfını önlemede işletmelerin süreç yönetimi ve tüketicilerin davranışsal katılımını incelemek için gözden geçirilir. İnceleme, gıda kaybı ve israfını önlemede işletmelerin süreç yönetiminin gözden geçirilmesini ve tüketicilerin davranışsal katılımının sağlanması gerektiğini önermektedir. İnceleme; gıda kaybı ve israfını önlemek için tarafların dikkatini çekmeyi sağlar. Gıda kaybı ve israfını önlemek için genel bir değerlendirme, gıda işletme yöneticileri ve tüketiciler için yol göstericidir.
